The Brasserie
The brasserie is the place to relax and enjoy food in an informal and cosy atmosphere. When you dine here, you can expect classic brasserie dishes with new twists. We serve everything from breakfast buffets to evening menus, and you are welcome whether you are staying at the hotel, here on business or just passing by.

Horseløkke

Restaurant Horseløkke is for those who want a fine dining experience. Under the leadership of head chef Thomas Pasfall, dishes are created with both precision and passion, allowing you to taste, feel and experience gastronomy on a whole new level.
The restaurant is temporarily closed, but we aim to reopen in the spring. When we welcome guests again, you can look forward to an experience where creativity, taste and aesthetics go hand in hand. Perfect for special occasions or extra pampering during your stay.

Head chef Thomas Pasfall ensures gastronomy in a class of its own
Thomas Pasfall is responsible for the gastronomy at Hotel Faaborg Fjord, and we are incredibly proud to have him on board. The Funen-based Michelin-starred chef brings experience, professional pride and passion to every single meal. With a background from some of the country's most renowned kitchens, Pasfall has perfected his craft over the years and developed a style that combines classic techniques with creative innovation.
As owner and head chef at Restaurant Pasfall in Odense from 2013 to 2024, he received repeated recommendations in the Michelin Guide Nordic Countries. He has made his mark on the Danish restaurant scene with critically acclaimed restaurants such as Restaurant Grå Anden in Frederikshavn and Munkebo Kro, which was named Restaurant of the Year by The Danish Dining Guide in 2004.
He was also named Chef of the Year in Denmark in 2000 and honoured as Icon of the Year by the Danish Dining Guide in 2021. Throughout his career, Pasfall has worked on everything from the Royal Yacht Dannebrog to top restaurants in both Denmark and Germany.
Thomas Pasfall is spearheading efforts to raise the hotel's gastronomic profile to new heights. The goal is to make Hotel Faaborg Fjord a gastronomic landmark on Funen. A place where taste, craftsmanship and experience come together in perfect harmony.
